A bit out of the way (40 mins east of Torrey), but Steele Canyon is a beautiful course with some very fun holes. 

The Grand Del Mar is a great hotel and golf course.  

Great course... Look at Barona Creek as well!

I love San Diego CC and it is well worth seeing if you can get on. It is private but they are great people there and it is a great course. Always in great shape, the greens are amazing. The greens and the bunkers are Augusta-like. Mr. Casper had influence on the greens so it makes sense. And you may be able to meet Mr. Casper. San Diego CC is one my my favorite courses and I would try to get on it if I were you. 

Maderas Golf Club would be another option. I have also heard some good things about the new La Costa work but I have not yet played it.

If you are willing to make the drive up to Carlsbad or Temecula, I highly recommend Aviara in Carlsbad and Journey at Pechanga in Temecula. Both are very fun to play, and are always in pristine condition.

If you do decide to head up to Temecula you may want to consider a stopover at Pauma Valley CC. A fantastic place if you like golf course architecture. A very solid golf course one of my faves as well. Not too out of the way. Just another idea to go with the other great ideas. Just depends on what you are looking for out of your rounds.

It is but they are typically pretty friendly with reciprocity. Have your pro call and see if he can get you a starting time. I would guess as long as there is not an event or a busy member time they would be willing to let a serious golfer a chance to play there great course. I hope this helps.
