I know that swing speeds decrease as clubs get shorter. What is the common difference (BallPark assessment) between clubs? One MPH? Three MPH? More? Less? I was on a monitor recently and my driver was registering 92 to 94 pretty consistently and the 8 irons I was testing were considerably less.

Ball park, and not Trackman, it is as much a function of shaft length as loft.  Basic physics - heads on a longer shaft travel further in the same time, so they have a faster speed.  The 8 iron was likely about 16-18% shorter, so 77-80 would be reasonable.

It will be considerably less with a driver to an 8 iron. I'm not sure what it would be per club but with the difference i have seen from my swing speeds i would guess your 8 iron was probably around 70?? It will also vary from person to person and the weight of your iron shafts.
